Caesar Salad Dressing

I really enjoy a good Caesar Salad.
In fact it's on my favorite foods list. 
Well... as long as it's done right!

I like a creamy, garlicy, egg free, and definitely anchovy free dressing. 
Ewww, I'm not an anchovy person, if the dressing has even the slightest hint of it in it, I can't eat it, it grosses me out.

So I found out some of the basic ingredients to a Caeser Salad Dressing and came up with one on my own. I always just kinda throw everything together in the mixer and mix to taste. Then when people ask me for the recipe I can't really give them one. Today was the first day I actually measured all the ingredients. This one's for you dad (now you might be able to make right!)

  • 2-3 large cloves of garlic (it depends how garlicy you like it)
  • 1/4 cup + 3 tablespoons of Shredded Parmesan Cheese
  • 1/2 teaspoon Worcestershire Sauce
  • 1/4 teaspoon Lemon Juice
  • 1/2 teaspoon Yellow Mustard
  • 3 tablespoons Olive Oil
  • 2/3 cup Mayonnaise
  • 2-3 Heads Romaine Lettuce (I buy the 3 pack eating right ones from Safeway)
  • 5oz Bag Croutons

Wash, chop up your lettuce put it in a bowl

Add 1/4 cup parm cheese and bag of croutons to lettuce and set aside


Clean garlic and chop in mixer ( I use a  electric counter top mixer, you could use a cuisinart too, I'm to lazy to get mine out).

Add the remaining cheese and chop.

Add Worcestershire, lemon juice, yellow mustard, and olive oil- chop again.

Then add Mayo and chop some more.

This is what it should look like:

Add dressing to lettuce right before serving, mix well.

We've had this many different ways; we've had with chicken, sun dried tomatoes, or steak.  
I suppose you could add anchovies if you really want to.

For a lower fat version I've even used lowfat mayo and it still tastes really good.

It kinda surprises me but even my two year old loves it!

I love, love, LOVE Caesar Salads! I make a homemade dressing similar to this, but garlic is my FAVORITE seasoning so I'm going to have to try this!
